This recipe is a fun one to prepare and take to a tailgate party. You won't believe how easy it is to make and trust me when I say, even if you're not a root beer drinker, you'll love this one. I do not like root beer, and I LOVE this recipe!
Pulled Pork in a Crockpot with Greek Yogurt Slaw
Pork Ingredients
1 ½ lb pork loin
12oz can diet root beer
Slaw Ingredients
3 cups shredded green cabbage
3 cups shredded red cabbage
½ cup plain low-fat Greek Yogurt
1 Tbsp apple cider vinegar
2 tsp lemon juice
1 tsp Dijon mustard
¼ tsp celery salt
Pinch stevia
½ cup sugar-free bbq sauce ( we use G Hughes brands )
Directions
Add pork and diet root beer to crockpot and cook low for 6 to 8 hours
Prepare slaw in medium bowl. Combine next 8 ingredients
After pork is finished pull apart and serve with bbq sauce and slaw
