This precious one loves to cook. This is a recipe she learned to make in a cooking camp over the summer! We tweaked it a little because she didn't like the chunks of apple inside :)
Apple Carrot Muffins - Egg-free Ingredients
1 cup organic applesauce
1 cup shredded carrots
1 1/4 cup whole wheat flour
1/2 cup instant Oats
1/2 cup honey
1/4 cup canola oil
1 tsp vanilla
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
2 TBSP chia seed
2 TBSP water
Topping (optional)
Chopped or slivered nuts (we use walnuts)
Directions
Preheat oven to 350 degrees F.
Spray muffin tin with non-stick spray (we use olive oil spray)
Combine the chia see and water and set aside to thicken (about 5 minutes)
Meanwhile, combine all dry ingredients into a large bowl
In separate large bowl, combine wet ingredients, including the chia seed (egg replacement).
Carefully add the dry ingredients to wet ingredients in 2-3 increments.
Stire until just combined
Using a small scoop or tablespoon, divide batter into the greased muffin tin.
Top with nuts if desired
Bake 18-22 minutes or until a toothpick comes out clean
