Chicken Parm without breading!? Yep, and it's JUST as good. This healthier version of chicken parm is so delicious and shockingly easy to prepare ahead of time so all you have to do is toss in oven upon arriving home after a busy day!
Chicken Parmesan
Ingredients
1 lb boneless, skinless chicken breasts
1/2 cup parmesan cheese, grated
1/4 tsp salt
1 tsp dried basil
1/2 tsp dried oregano
1/2 tsp paprika
1/2 tsp garlic powder
1 tbsp butter, melted
1 cup mozzarella cheese
3/4 cup Rao's Marinara sauce
Spaghetti noodles (Raos or Delallo pasta whole wheat) or 3 cups spaghetti squash, cooked
Directions
Preheat oven to 450 degrees. Line a baking sheet with parchment paper
In a medium-sized bowl, combine parmesan cheese, salt, basil, oregano, paprika, and garlic powder. Set aside.
Pound the chicken breasts thin.
Toss the chicken with melted butter, coating evenly.
Dredge the chicken in the cheese mixture.
Place on prepared baking sheet.
Bake for 20 minutes or until the chicken is completely cooked.
For each serving - Makes 3 Servings:
Place 4 ounces chicken on top of 1 cup of spaghetti squash (if using squash) and add 1/4 cup marinara sauce on a plate. Top with 1/3 cup reduced-fat mozzarella cheese.
