Grilled Moroccan Beef Skewers with Yogurt Sauce
Ingredients
6TBSP chopped parsley
4 garlic cloves minced
2 lemons, zested and juiced
2 tsp coriander
1 tsp paprika
1lb beef sirloin steak
1 pint grape/cherry tomatoes
1 cup plain Greek yogurt
Directions
For the marinade - mix together 4 TBSP parsley, garlic, 1 1/2 tsp lemon zest, 1/4 cup lemon juice, 1/4 cup olive oil, paprika, coriander, salt and pepper
Add beef to marinade and let sit for at least 30 mins, covered
While the beef marinates, skewer the tomatoes
Pull meat from the marinade and reserve the marinade.
Skewer the beef and grill until desired temperature.
Grill tomatoes until they are lightly charred.
Place leftover marinade into a small saucepan and boil until boiling.
For yogurt sauce - mix yogurt, remaining parsley, 1/2 tsp lemon zest, 2 TBSP lemon juice, salt and pepper to taste.
Serve grilled beef and tomatoes, drizzling over boiled marinade and with yogurt sauce on side.
