A one-pot meal for the win with a hidden vegetable!! Every October I make them a little extra special and turn them into Jack-O-Lanterns.
Meaty Stuffed Peppers
Ingredients
4 Sweet Bell Peppers
1 pound Ground Beef, cooked
1 cup shredded Cheese
1 cup raw grated Cauliflower, I use my food processor
1 cup Italian diced Tomatoes, drained
1/2 cup BBQ Sauce
Salt and pepper to taste
Garlic powder to taste
Directions
Preheat oven to 350 degrees
Cut the tops off peppers. Discard the seeds and membranes.
Combine cooked ground beef, cauliflower, diced tomatoes, BBQ sauce and seasonings of choice in a large bowl.
Evenly divide meat mixture between the peppers. Top with cheese
Cover with foil and bake for 30 minutes.
Bake uncovered for 5 more minutes
