Who doesn't love a cool refreshing popsicle during those warm months? I love having healthy alternatives in our freezer. Knowing what is going into our foods has been so important to me even before all of my allergies kicked in.
Before my youngest had her tonsils out at age 3 she helped me make a big batch of these in preparation for the recovery. She loved it and felt like she was getting a super sweet treat. (Don't worry, she still ate her weight in ice cream during that time too ;-)
If you have children, grab the children and have fun making these, bringing kids into the kitchen will inspire them to try more foods.
Rainbow Popsicles
Ingredients
Makes 22 Blue Layer 1 cup fresh blackberries 1 cup vanilla Greek yogurt (i use Siggis) 1 tablespoon honey 1 teaspoon fresh lemon juice
Green Layer 1 small ripe banana, sliced 1 cup baby spinach 1 cup vanilla Greek yogurt (I use Siggis) 1 tablespoon honey 1 teaspoon fresh lemon juice
Red Layer 1 cup sliced fresh strawberries 1 cup vanilla Greek yogurt (I use Siggis) 1 tablespoon honey 1 teaspoon fresh lemon juice
Orange Layer 1 cup chopped fresh peaches 1 cup vanilla Greek yogurt (I use Siggis) 1 tablespoon honey 1 teaspoon fresh lemon juice
Directions
Process each layer separately in a high-powered blender until smooth.
Pour the mixtures into 3-ounce ice pop molds, alternating the colors.
Top with a lid and insert craft sticks.
Freeze for 8 to 12 hours.
Once frozen I pull from molds and place in zip lock bag to store.
