Love having these healthy sweet treats on hand in the freezer!!
This is a copycat recipe for Snickers Protein Bars, that I found on Instagram from Autumn Calabrese. I have swapped out several of the ingredients to make it allergy-free for me. Enjoy!!
Snickers Protein Bars
Ingredients for the base
2/3 cup vanilla protein powder
1/2 cup coconut flour
6 TBSP milk
2 TBSP maple syrup
Ingredients for the nutty layer
1/4 cup Organic Sun Butter
1 TBSP coconut oil (melted)
2 TBSP maple syrup
Pinch of salt
Ingredients for chocolate coating
1.5 cups chocolate chips
1 tsp coconut oil
Directions
Mix the first 4 ingredients together. (protein powder, coconut flour, milk and maple syrup)
Put into a rectangular loaf pan lined with parchment paper. Press 'batter' down evenly
Mix the last 4 ingredients in a separate bowl.
Pour over top of the 'batter' in the loaf pan.
Spread it evenly over the top.
Pop into the freezer for 1-2 hours
Cut into 8 equal rectangles
Melt the chocolate with coconut oil and dip the rectangle pieces into the chocolate. Cover completely.
Place back into the freezer for about 30 minutes for chocolate to harden.
