This recipe has been tried and tested. I also used this recipe on our Thanksgiving turkey a couple of years ago for the entire family and the reviews were wonderful. One family member told me it was the best Turkey she had ever had. I have used it on Thanksgiving Turkeys ever since.
I love having a simple recipe like this on hand for busy weeks, especially when the husband is traveling. It makes preparation so easy. I whip up the seasoning and either toss it in the oven or the smoker and we have days' worth of rotisserie chicken to eat from. More recipes to come with how to use leftover rotisserie.
Lemon Rosemary Rotisserie Chicken
Ingredients
4 lb whole chicken
1 tsp salt
1 tsp paprika
1/2 tsp onion powder
1/2 tsp dried thyme leaves
1/4 tsp cayenne pepper (optional)
1/4 tsp black pepper
1/2 tsp garlic powder
2 sprigs of fresh rosemary
1 lemon quartered
Directions
Preheat oven to 250°F
Rinse the chicken, inside and out, under cold running water. Pat dry with paper towels
Mix the spices together and season the chicken
Rub the seasoning under the skin of the breasts and also inside chicken cavity
Stuff fresh rosemary and lemon quartered inside chicken
Place in a dutch oven and cover with top or aluminum foil and cook for 3.5 - 4 hours or until internal temperature reaches 180 degrees°F
I always let it rest a little before tearing apart the chicken
